BraiZe opened in the summer of 2014 as a "pop-up" restaurant in humble space inside Bloomington, IL's VFW Post 454 with the goal of taking something simple and slowly turning it into something big.
BraiZe was conceived by Lexington, IL natives Brandon Leach and Zack Poleto. They have been best friends for over twenty years despite following different career paths. They traveled the world, visiting India, parts of Asia, Australia, the Middle East and many states across the United States. Their favorite dishes from around world inspired what is BraiZe's menu today.
BraiZe prides themselves starting as a small business to this day: using ingredients sourced from local farmers, having local craft beers and preparing each meal fresh to order. The menu is updated regularly based on seasonal availability and is known for having weekly sandwich specials. The signature, and now local favorite item, is the BraiZito. It is a sandwich like no other: a six-inch chunk of fresh-baked bread hollowed out and stuffed with goodness. The bottom of the loaf is buttered and grilled so every BraiZito is good to the last bite.
